I finished the warm-up process but I'm not ready to run ads. Should I continue to do engagement ads?

If you finish the warm-up process but are not ready to run ads in the next couple of days, you can run an engagement ad every couple of days to keep the energy in the account. If it's just going to take a couple of days, don't worry about it.
